Probiotics have taken the spotlight in healthful foods over the past few years and with excellent reasons. Sauerkraut is made by letting finely cut cabbage ferment in brine (a highly concentrated salt water solution.) The Lactobacillus bacteria on cabbage is what converts its sugars into lactic acid, which results in a crunchy and sour condiment that works as a side or can be added to any meal.
